Eggs Are Back On Your Plate

Do you like green eggs and ham? I do not like them, Sam-I-am. I do not like green eggs and ham.  

I grew up reading the beloved Dr. Seuss books right around the time that eggs started to get a bad rap. Eggs were thought to be responsible for raising serum cholesterol so eggs disappeared from the breakfast menu and got replaced with processed cereals and toast with margarine. A cracked perception. How wrong they were!A study from down under in Australia has proved that eggs do not negatively affect lipid levels in patients with Type II diabetes.  In fact, an egg-rich diet for 3 months showed better appetite control and greater satisfaction with satiety or feeling full which translates to eating less food.

Eggs are back on the plate and processed grains which do dysregulate blood sugar levels and cause low level systemic inflammation are out.  

There was a concern that Type II diabetic patients would have worse cardiovascular outcomes if they ate eggs.  Egg consumption guidelines differ around the world.  The US guidelines recommended that dietary cholesterol should not exceed 300 mg/day or basically one egg.  Type II diabetes were recommended to consume no more than 4 eggs per week.  

140 participants with BMI of 25 or above were divided into two groups.  One group got less than 2 eggs per week and the other group got 2 eggs per day for 6 days per week for 3 months.  Low-density lipoproteins, triglycerides and blood sugar levels were the same in both groups, but the high egg group had increases in the good cholesterol or HDL. Higher HDL levels are equated with a reduction in cardiovascular events in people with Type II diabetes.  

The high egg group was less hungry and had better satisfaction with their diet.  They enjoyed their food and were less bored with their diet.
